It ‘was a spur of the moment, the decision to board a train to Salerno, which is where we should take the bus to Amalfi. We were a group of young women struggle the way we train and right back on a different mode of transport. The bus to Amalfi, along a narrow two lane highway that drops from a steep cliff in deep blue crystal.
How daring motorcycle riders darted between cars we came to complete stop. Just in front of the bus was another bus, as well as large and just as determined to pass this narrow strip of asphalt. One inch at a time we squeezed from the other as both drivers hidden in the rear view mirrors. At one point the other passengers on the bus were so close we could open the windows and exchanged a handshake and perhaps a glass of wine.
How grateful we approached the small, four cities of Amalfi road we all piled out of the bus to discover a quaint little bar overlooking the beautiful but cold waters of the sea. It was December so even if we did not spend our time on the beaches of this beautiful coast, we have had plenty of time to eat, which is one of my favorite moments of the past. The cold water makes a wide variety of shrimp, fish, mussels and other delicacies of the sea and this was the perfect time to indulge in the freshness of the Mediterranean has to offer. There in the window of the restaurant sign read: “Enjoy our pasta recipe garlic shrimp homemade”. Translate to: “Enjoy our pasta recipe garlic shrimp, homemade.” We all piled into the cafeteria.
Just as the abundance of delicious seafood there is no lack of beautiful Italian waiters to come to our service. Luke was his name and his mother and two brothers owned and ran the coffee together with the adjacent club room where the men of the city would come, drink wine, play cards and smoke cigars. He insisted to bring a bottle of delicious white wine and proudly boasted his mom garlic shrimp pasta with homemade fettuccine.
Italians too much pride in their cooking to recommend only the best can offer. We eagerly accepted his suggestion and ordered the special pasta recipe garlic shrimp. We asked that bring out a big pot for us all to share. The sauce of butter and garlic was pooling around the homemade pasta and shrimp danced on top with splashes of fresh chopped parsley. You could smell the aroma of garlic as he filled cafe, long before it arrives at our table. As we dined and drank Luke begged to introduce me to her mom so I could properly thank you for the wonderful dinner. The small Italian woman accepted, a rarity on himself, and came to meet us for her blessings.
As Luke’s mother was sitting next to her beautiful son began to share how she created a delicious recipe for garlic shrimp paste in detail. You must stamp the garlic with a knife blade or the palm of your hand. Do not crush with a tool, Luca explain how he interpreted. I sat there in wonder and desire to learn the culinary secrets of this woman. How did it come to be that this woman is willing to share her family recipe with a group of strangers, as if welcoming us into her kitchen to see the creation date? I was not questioned. I just sat and listened and absorbed everything.
Garlic shrimp and pasta recipe:
1 pound of shrimp that was bombed, deveined and cleaned
1 pound fettuccine pasta homemade
2 sticks unsalted butter
8-10 beaten cloves of garlic
The juice of 1 / 4 fresh lemon
1 / 4 cup white wine drinking
1 / 2 cup chopped fresh Italian parsley
Just enough olive oil to coat a frying pan
Salt and pepper to taste
When we had our fill on the masterpiece garlic, shrimp paste, then a freshly made espresso, we extend our thanks once again, as we left the coffee. As I turned around to wave good bye to the lady I could see the glow in his eyes as he watches the team of women to venture out to resume their travels. It occurred to me that he took a liking to us that he remembered his childhood and how she may have met with a group of her friends long before he was blessed with the life he has now in this small town of Amalfi, and when Luke and his two other children were not even a thought in his mind yet.
Hello sir, thank you very much! I told her as I waved to her with knowing eyes.
Beautiful Hello guys, hello. She responded with an equally knowing look.
